  • 5 cups all-purpose flour
  • 3 cups kosher salt
  • 3 tablespoons fresh ground black pepper
  • 5 egg whites
  • 1 1/2 cups water
  • 1/2 cup chopped fresh herbs (parsley, thyme, and/or sage)
  • 1 (6 to 7-pound) whole beef tenderloin, trimmed
  • 1 tablespoon olive oil
Instructions
  1. Place the flour, salt and pepper in a large mixing bowl. In another bowl, whisk the egg whites and water and add to the dry ingredients along with 2 tablespoons of the herbs. Combine with a potato masher until the mixture begins to come together. Then knead with your hands for 1 to 2 minutes. Transfer the mixture to a large zip-top bag, seal, and let stand at room temperature for 4 hours, or up to 24 hours.
  2. Transfer dough to a floured surface and roll out to 3/16-inch thickness, approximately a 24 by 18-inch rectangle. Trim away extra dough, if necessary. Sprinkle the remaining herbs on the center section of the dough and gently press down.
  3. Preheat oven to 400 degrees F.
  4. In order to achieve uniform cooking, fold over slender tail end of tenderloin and tie with kitchen twine. Set a large electric griddle at its highest setting; brush the tenderloin with the olive oil and sear on all sides until well browned, approximately 10 minutes. Rest the meat for at least 5 minutes or until it is cool to the touch so as not to melt the dough.
  5. Place the tenderloin in the center of the dough. Fold top part of dough over, flipping back about 1-inch of dough onto itself. Repeat with the bottom half of the dough. Press together the 2 flaps of dough and seal. Make sure the dough is not too tight around the tenderloin. At the ends of the tenderloin, press together dough to form a seal and cut away any excess. Transfer to a sheet pan, place in the oven and roast to an internal temperature of 125 degrees F, approximately 25 to 30 minutes. Remove from the oven and allow to rest for 30 minutes or up to 1 hour. The tenderloin will continue to cook 10 to 15 degrees more. Cut salt crust at 1 end and extract meat by pulling out of dough tube. Slice and serve immediately.

  • 6 pounds bone-in ham
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • 2 teaspoons cornstarch
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper
Instructions
  1. Preheat oven to 350 degrees F.
  2. Place ham on a rack in a foil lined roasting pan. Bake the rounded side up for one hour.
  3. In a medium saucepan over medium heat, mix all ingredients together. Stir until it forms a nice thick glaze.
  4. Rub on half of the glaze and bake for 30 minutes more. Flip the ham over and rub on remaining glaze and bake for 1 hour more. Remove from oven and allow the ham to rest for at least 30 minutes before serving.

  • 1 (5-pound) standing rib roast
  • 1 tablespoon House Seasoning, recipe follows
Instructions
  1. Allow roast to stand at room temperature for at least 1 hour.
  2. Preheat the oven to 375 degree F. Rub roast with black pepper, coarse salt and garlic powder; place roast on a rack in the pan with the rib side down and the fatty side up. Roast for 1 hour. Turn off oven. Leave roast in oven but do not open oven door for 3 hours. About 30 to 40 minutes before serving time, turn oven to 375 degrees F and reheat the roast. Important: Do not remove roast or re-open the oven door from time roast is put in until ready to serve.

  • 1/2 pound bulk pork sausage
  • 1 egg
  • 2/3 cup milk
  • 2 tablespoons vegetable oil
  • 1 cup pancake mix
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup shredded peeled apples
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon pumpkin pie spice
  • 1 cup apple cider
  • 1 tablespoon lemon juice
  • 2 tablespoons butter or margarine
Instructions
  1. In a skillet, cook the sausage over medium heat until no longer pink; drain and set aside. In a bowl, beat the egg, milk and oil. Stir in pancake mix and cinnamon just until moistened. Fold in apple and sausage. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles from on top. Cook until second side is golden brown.
  2. For syrup, combine the sugar, cornstarch and pumpkin pie spice in a saucepan. Gradually stir in cider and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter until melted. Serve warm with the pancakes.

  • 4 potatoes, peeled and cubed
  • 1/2 onions, sliced
  • 1 tablespoon vegetable oil
  • 8 eggs, beaten 3/4 cup cubed ham
  • salt and pepper to taste
  • 3/4 cup shredded Cheddar cheese
Instructions
  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 5 minutes. Drain and set aside to cool. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  2. In a cast iron skillet, heat oil over medium heat. Add onions and cook slowly, stirring occasionally, until onions are soft.
  3. Stir in eggs, drained potatoes, ham, salt and pepper. Cook until eggs are firm on the bottom, about 5 minutes. Top frittata with shredded cheese and place in preheated oven until cheese is melted and eggs are completely firm, about 10 minutes.

  • Roasted Pepper & Asiago Chicken
  • Sausage, thinly sliced
  • 1 tablespoon extra-virgin olive oil
  • 3 ounces canned or jarred roasted red peppers, chopped
  • 1 clove garlic, finely minced 4 large eggs
  • 2 tablespoons fresh Italian flat parsley,chopped
  • 1/2 teaspoon black pepper
  • 1/2 cup low-sodium Parmesan cheese,grated
  • 1 teaspoon Tabasco sauce
Instructions
  1. Preheat oven to 400 degrees.
  2. Heat the oil in a 10-inch ovenproof nonstick skillet over medium heat. Add the sausage and brown slightly. Add the roasted red peppers and garlic, cook for 1 minute. Reduce heat.
  3. In a mixing bowl, whisk eggs. Add parsley, pepper, cheese and Tabasco. Stir. Pour egg mixture over sausage and peppers. Cook on low heat for 7-8 minutes until the bottom is set and the top is a little runny.
  4. Place the skillet in the oven and cook until the eggs are set and golden brown, about 6-7 minutes.
  5. When done, remove and carefully slide Frittata onto a serving platter. Slice and serve.

  • 4 skinless, boneless chicken breast halves
  • 5 fluid ounces Worcestershire sauce
  • 8 slices bacon
  • 2 tablespoons butter
  • 8 ounces fresh mushrooms, sliced
  • 1 (8 ounce) package Monterey Jack cheese, shredded
  • 1 (16 ounce) container honey mustard salad dressing
Instructions
  1. Place chicken in a glass dish or bowl; poke with a fork several times, then pour Worcestershire sauce in and turn to coat. Cover dish or bowl and refrigerate for about 1 hour.
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
  3. Heat butter in a small skillet over medium heat. Add mushrooms, and saute for about 10 minutes, or until soft; set aside.
  4. Preheat oven to Broil.
  5. Remove chicken from marinade (discard any remaining liquid), and broil for about 5 minutes each side. When chicken is almost finished, top each breast with 2 slices bacon, then cheese. Continue to broil until cheese has melted, then remove from oven. Serve with mushrooms and salad dressing for topping.
Notes

Marinate chicken for an hour.

  • 6 skinless, boneless chicken breast halves
  • 1/2 cup shredded Parmesan cheese
  • 1 clove garlic, finely chopped
  • 4 teaspoons butter
  • 4 ounces thinly sliced prosciutto
  • 10 ounces sliced whole milk mozzarella cheese
  • 1/3 cup white wine
  • 1/4 cup olive oil
  • 1 pinch black pepper
Instructions
  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Pound chicken breasts flat, and lay them on work surface. Sprinkle liberally with Parmesan cheese on both sides. Place a pinch of minced garlic and 1 teaspoon butter in the center of each breast. Cover each breast with a layer of prosciutto and mozzarella cheese. Reserve some of the prosciutto to place on top of the chicken. Roll up each chicken breast, and secure with toothpicks.
  3. In a 9×13 inch baking dish, combine white wine and olive oil. Arrange chicken rolls in dish. Place a small piece of prosciutto on top of each roll, and sprinkle with pepper.
  4. Bake in preheated oven for 30 minutes, or until chicken is no longer pink, an juices run clear.

  • 1 teaspoon onion, finely chopped
  • 3 tablespoons brown sugar
  • 4 tablespoons soy sauce
  • 4 tablespoons red wine vinegar
  • 2 teaspoons chopped fresh thyme
  • 1 teaspoon sesame oil
  • 3 cloves garlic, chopped
  • 1/2 teaspoon ground allspice
  • 1 habanero pepper, sliced
  • 4 skinless, boneless chicken breast halves – cut into 1 inch strips
Instructions
  1. Combine the onion, brown sugar, soy sauce, vinegar, thyme, sesame oil, garlic, allspice and habanero pepper in the container of a food processor or blender. Process until smooth. Place the chicken into a large resealable bag, and pour in 3/4 of the sauce. Squeeze out excess air, and seal. Marinate in the refrigerator for at least one hour.
  2. Preheat your oven’s broiler.
  3. Remove chicken from bag, and discard marinade. Broil chicken for 10 to 15 minutes, turning once to ensure even cooking. Heat remaining sauce in a small pan, and pour over chicken when serving.

  2. Top batter evenly with chicken. Pour marinara sauce over chicken, sprinkle with cheese and herbs.

  • 1 pound bulk hot Italian sausage
  • 1 loaf Italian bread, cut in half lengthwise
  • 1 beefsteak tomato, sliced
  • 1 cup roasted red bell pepper strips
  • 1 (8 ounce) package mozzarella cheese,
  • sliced
  • 1/4 cup sliced green olives
  • 1/4 cup sliced black olives
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon dried oregano
  • 1/4 tablespoon dried basil
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 2 tablespoons diced red onion
  • 1 tablespoon chopped garlic
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Crumble the sausage into a saucepan over low heat; cover and cook until sausage is completely browned, stirring every 30 seconds; drain.
  3. Place the bread on a baking sheet with the crust sides down. Arrange the cooked sausage evenly over both halves of bread. Top each with tomato slices, red bell pepper strips, mozzarella slices, green olives, and black olives.
  4. Bake in preheated oven for 10 minutes.
  5. Whisk together the olive oil, balsamic vinegar, oregano, basil, salt, pepper, onion, and garlic in a bowl. Drizzle over baked bread halves.
  6. Bake another 5 minutes. Cut into 2 inch slices to serve.

  1. Preheat oven to 400 degrees F.

  3. Bake for 20 to 25 minutes or until browned and cooked through.
